Why do you use purple sweet potato?
Purple sweet potato is the foundation of our recipe, providing the cookies' signature flavor, color, and soft-baked texture. Beyond its culinary qualities, it was chosen because it naturally contains anthocyanins, the plant compounds responsible for its vibrant purple color, as well as dietary fiber, including prebiotic fiber.
Why do you use allulose and monk fruit?
We use allulose and monk fruit to provide balanced sweetness without added sugar.
Why do you use Ceylon cinnamon?
Ceylon cinnamon is valued for its delicate flavor and because it naturally contains much lower levels of coumarin than common cassia cinnamon.
Why do you use blanched almond flour?
Blanched almond flour contributes to the cookies' delicate texture and rich flavor while helping keep the recipe grain-free. Because the skins are removed before milling, blanched almond flour also contains lower levels of naturally occurring lectins than whole almond flour.
Why do you use tapioca flour?
Tapioca flour helps create the cookies' soft-baked texture while keeping the recipe grain-free.
